I was going to see how Kenny liked these before I posted it, but....I am just going to do it anyways.
Kenny goes to work pretty early and needs an easy meal to go for breakfast which doesn't require a microwave, oven or fridge.
He had been eating pop tarts or more recently Quakers oatmeal cookies.
Now the oatmeal cookies probably aren't the worst thing, but we have a hard time finding them in any grocery stores. One store has them one time then No one does the next time.
Anyways, I was thinking the other day...."duh, how hard could it be to make some oatmeal to go?" not hard! and you know it's going to be healthier than store bought!
I wrote up a little recipe and gave it a try...and it was Ok...not really great.
So I looked online some more and found some others and tweaked mine a bit and this is what I came up with.

Oatmeal Breakfast "cookies"
Yields: about 15 Large cookies.
-2 mashed bananas
-1/3 cup apple sauce
(I buy those single serving apple sauce cups cause they are about 1/3 a cup and you just throw one in when you need them. It works great! also great to use in banana bread instead of oil )
-1 egg
-1 tsp Vanilla
-1/2 cup (1 %) Milk
-1 tsp baking powder
-2 1/2 cups quick oats
-3/4 cup Oat flour
I made Oat flour by putting steel cut oats (for oatmeal) into the blender for a couple minutes. Works great!
1. In a medium mixing bowl, mash and blend bananas until smooth.
2. Add all the wet ingredients together. Blend until smooth.
3. Add Oats, baking powder and Oat flour. Mix well.
4. Scoop into large mounds (about 2 tablespoons? I use the Pampered Chef large scooper tool)
5. Bake at 350 degrees for about 12-15 minutes
Kenny likes homemade Strawberry freezer Jam on his oatmeal so for half of the batch I made a little crater in the middle of the "cookie" and put a heaping teaspoon of jam in the center and baked it that way.
I thought those were way yummy!
For the other half I put a dash of cinnamon and about 2 tablespoons of brown sugar cause that's the way Malias and I like our oatmeal. I mixed it into the bowl before scooping it onto the cookie sheets. I also like those ones.
Just remember: these are NOT cookies so they are not really sweet. They are supposed to be close to a bowl of oatmeal, so add flavor as you would like! I want to try some with dried fruit and nuts and I will be trying some with chocolate chips...for the hubby. :)

Thanks, Tara, for the recipe! I love your blog! Can I add it to my blog list? I loved your photos at the Memorial Day breakfast. We were going to go, but Isaac ended up being in the hospital for two days (fun way to spend vacation!). Hopefully next year :) And you look great. You may not be losing pounds but you're doing well and motivating many! Keep it up!
